As I can see you’ve created a separate topic with the same question:

Are 'updating' and 'downloading & installing' Desktop Editors the same?

When there is a new Desktop Editors release, does one just download it as if downloading Desktop Editors for the first time, or is there an actual ‘update’ shortcut that can be used that updates only features that have been changed from the prior version? – e.g., to update v.8.2 of Desktop Editors to v.8.3 Thanks.

If you have Desktop Editors installed, you can check if there is an update available via ONLYOFFICE button in top left corner (next to Apple logo) or by using Cmd+U shortcut. If update is available, it will download it and install it directly. It will not remove the app and install it anew, i.e. as a first installation.
