I discover the product and I want to know for example how many docs are opened by a simple user.

Onlyoffice Docs is merely an Editor (check out this documentation to learn more about how it works - How It Works), document storage system should be implemented by the integrator, so this function should be implemented on the side of the integrator as well (monitoring number of documents opened by user)
