Document Server version:
Type of installation of the Document Server (docker, deb/rpm, exe)
OS: exe Win 11
Browser version: Firefox 106.0.1 (64bit)
When windows gets it in its head to update during the middle of the night, any unsaved docs are wiped from existence, and no recovery appears to be possible.
Is this an issue, a setting, or something I need to learn to suck eggs with?

The only recommendation I can give to you to avoid cases like this is to manually control OS updates and use provided in Document Server script to forcefully end all editing sessions, save all documents with current changes to the storage and stop the Document Server so you can update. Refer to this troubleshooting guide to find out how to do so:
